  • olive oil
  • 1 ½ tablespoon tahini
  • 1 tablespoon lemon juice
  • 1 small, crushed garlic clove

  • a pinch ground turmeric
  • 85g spinach
  • 250g block halloumi, diced into cubes
  • 40g raisins
  • ½ small red onion, finely sliced

  1. The oven should be heated to 220C/fan 200C/gas 7. To make a dressing, combine 2 tsp of olive oil, the tahini, lemon juice, garlic, dried mint, turmeric, and 2 tbsp of water.
  2. Add a dash of salt and pepper, mix in the spinach, and let sit for 20 minutes to soften.
  3. Halloumi cubes should be tossed with an additional 2 teaspoons of oil, spread out on a baking sheet, and baked for 8 to 10 minutes, or until crisp and golden.
